  1. There are two problems with this statement:
    Gluten is in some flours NOT in sugar…
    Most peanut butter has added sugar in it so the cookies won’t be sugar free…

  2. When I make my peanut butter cookies, this is pretty much what I do except I add a metric fk-ton of sugar (so it wouldn’t be healthy anymore…). They’re usually a pretty big hit – I like to use crunchy peanut butter for texture. Making peanut butter cookies the “right” way (with flour, etc) it’s too big a PITA for me so I just do this. They usually come out a bit on the softer side so if you prefer crispy cookies you may be a bit disappointed.
